Buffalo wings recipe

Crispy chicken wings with sticky buffalo sauce and blue cheese dip

Ingredients

Crispy baked wings

• 2 kg chicken wings / “wingettes and drumettes”
• 5 tsp baking powder
• 3/4 tsp salt
• 2 tsp garlic powder
• Black pepper

Buffalo sauce

• 60g unsalted butter, melted
• 1/2 cup Frank’s Original Red Hot Sauce (or sriracha plus extra tsp sugar)
• 1 tbsp brown sugar
• 1/4 tsp salt

Blue cheese dip

• 1/2 cup crumbled blue cheese, softened (e.g. gorgonzola)
• 1/2 cup sour cream
• 1/4 cup mayonnaise
• 1 small clove garlic, minced
• 1-3 tbsp milk
• 2 tbsp lemon juice
• 1/2 tsp salt
• Black pepper

Method

Wings

1. If you’ve planned ahead, dry the wings out on a rack in the fridge overnight. If not, pat dry with paper towels.
2. Preheat oven to 120°C.
3. Line tray with foil, and spray/rub oil onto a rack above the tray.
4. Place the wings in a large bowl (or ziploc bag).
5. Sprinkle over baking powder, salt, pepper and garlic powder.
6. Toss well (or shake bag) to coat wings evenly.
7. Place wings skin side up on the rack.
8. Bake on the lower shelf in the oven for 30 minutes.
9. Move the shelf up to the middle of the oven and turn the oven up to 200°C.
10. Bake for a further 40-50 minutes, rotating the tray halfway through. No need to turn the wings.
11. The wings are ready when they are dark golden brown and the skin is very crispy.
12. Toss with the buffalo sauce and serve immediately with the dip (and celery sticks!).

Buffalo sauce

1. Whisk together the ingredients.
2. Keep warm or reheat just before using on the wings.

Dip

1. Mash the blue cheese with sour cream until smooth.
2. Add the remaining ingredients and mix until combined, using the milk to get it to the consistency you want.
3. Store in the fridge until required.
4. Remove from the fridge ~15 minutes before serving.

Other notes

The baking powder is what makes it super crispy. Use aluminium free (if that’s a thing in the UK?) and make sure there are no clumps on the wings.

Verdict

First time - didn’t have any blue cheese for the dip, but it was super good! The crispy chicken goes perfectly with the gooey sauce and dip.

The chicken was nice and crisp, although I reduced the temperature a little since it’s a fan oven. I’ve now reduced the temp in the hot part to 200.
