Fried chicken chunks with a sweet sticky sauce

Ingredients

• 450g chicken breast, in small (~25mm) chunks
• 1 egg
• 1/2 cup corn flour
• 1/4 tsp salt
• 1/4 tsp white pepper
• 1/4 tsp garlic powder
• Oil for frying
• Knob of unsalted butter
• 3 tbsp sesame oil
• 1 tsp ginger garlic paste
• 1 tbsp brown sugar
• 2 tbsp honey
• 7 tbsp sriracha
• 1 tbsp soy sauce
• Sesame seeds for garnishing
• Spring onions for garnishing

Method

1. Beat the egg.
2. Put the chicken breast in a bowl and pour over the beaten egg. Mix until coated.
3. Mix the cornflour, salt, white pepper and garlic powder in a bowl.
4. Coat the chicken pieces in the cornflour.
5. Heat the frying oil in a pan on a high heat (to 180°C?)
6. Deep fry chicken for around 5 minutes.
7. In a separate pan, melt the knob of butter and add the sesame oil, garlic and ginger paste, brown sugar, honey, sriracha and soy sauce.
8. Mix and heat the sauce to combine.
9. Add the fried chicken to the pan and mix until well covered.
10. Sprinkle some sesame seeds and spring onion over the top and serve.

Verdict

The sweet sauce really makes this! I’m a bit wary of deep frying but it’s worth it for special occasions. We made this for Christmas 2020 and it started our tradition of making unusual Christmas dinners!
