Pressure cooker lamb tagine recipe

Spiced and fruity "tagine" cooked in a pressure cooker with succulent lamb

Ingredients

• 2 tbsp olive oil
• 1.3 kg roughly chopped lamb - big pieces are nice
• 2 red onions, finely diced
• 3 garlic cloves, minced
• 1 tbsp fresh ginger, grated
• 2 tsp ground cumin
• 2 tsp ground turmeric
• 2 tsp sweet paprika
• 1 large cinnamon stick, or 1/4 tsp ground cinnamon
• 100g dried apricots, finely diced. Other dried fruits like dates, prunes, raisins will work
• 2 tbsp honey
• Juice of half a lemon
• 3 tbsp tomato paste
• 1 tin chopped tomatoes
• 1 tin chickpeas, drained and rinsed
• 250ml hot chicken stock

To serve:
- 0.5-1 cup green or kalamata olives, sliced in half
- 3 tbsp flaked almonds or chopped pistachios
- Handful of coriander or parsley, chopped
- Chilli flakes
- Couscous

Method

1. Heat the oil in your pressure cooker and brown the lamb for a few minutes, in batches if necessary.
2. Set the lamb aside. If you are short on time, just skip browning the lamb.
3. If there are any browned bits at the bottom, deglaze with a splash of stock or water.
4. Add the chopped onion and cook for 5 minutes until softened.
5. Add the garlic, ginger and spices and stir.
6. Return the lamb to the pot and stir to combine.
7. Add the lemon juice, tomato paste, apricots and honey. Stir to combine.
8. Add the chopped tinned tomatoes, chickpeas and stock.
9. Cover, seal the vent and cook for 20 minutes at high pressure.
10. Allow for 10 minutes natural pressure release and then manually release the remaining steam.
11. Add the olives to warm up
12. Remove the cinnamon stick if used. Taste and season if necessary.
13. Serve over couscous, and sprinkle with coriander/parsley, almonds/pistachios and chilli flakes.

Verdict

• Pretty nice, not quite as fragrant as the slow cooker recipe but it was nicely cooked.
• Needed some extra water added to stop the pressure cooker warning about burning
