Crispy-jacketed fluffy-inside baked potatoes

Cook: 25+30-40 minutes

Ingredients

• Potato (russet recommended)
• Butter or olive oil
• Flaky salt + pepper

Method

1. Heat oven to 230°C.
2. Place wire rack over a baking tray, with foil to catch drips.
3. Poke potato all over with a fork.
4. Bake potato for 25 minutes.
5. Brush the potato with melted butter or olive oil and flip upside down.
6. Sprinkle the potato with a generous pinch of salt.
7. Bake potato for another 20 minutes.
8. Check potato for doneness by squishing it. Continue in 5 minute increments if not done yet.
9. Cut open, squeeze and serve.
